Lachcha Parantha:- Ingredients 2 cups wheat flour, 2 tbsp ghee for the dough, salt to taste, wheat flour (for rolling and sprinkling), 7 tsp ghee for brushing, ghee for cooking How to make In a bowl, mix wheat flour, ghee and salt. Mix well. Take lukewarm water to knead into soft dough. Now make round balls from dough. Roll a portion of the dough using wheat flour. Now spread ghee over it. Sprinkle wheat flour evenly over it. Now start making pleats like fan by folding from one end to other. Now make a swiss roll with it and press this ball from middle. Roll this ball with wheat flour. Heat tawa and cook parantha using little ghee/butter till it gets brown. Now remove lachcha parantha from flame. Now apply enough butter before serving.

Tandoori Naan at home (without tandoor):- Ingredients 1 cup maida, 1/2 tsp dty yeast, 1/2 tsp sugar, 1 tbsp fresh curd,1 tbsp melted ghee, salt taste, 5 tsp kala til, maida for rolling, butter (for brushing) How to make In a bowl, mix yeast, sugar and 5 tbsp of lukewarm water and cover it. Put this aside for 5-7 minutes. Knead soft dough by mixing maida, yeast-sugar mixture, curd, melted ghee and salt and knead using enough lukewarm water. Cover this lid with a lid and let it increase in volume. Make round balls from the dough. Press the round ball and sprinkle 1/2 tsp of kali til over it. With a use of rolling pin, start rolling dough in oblong shape using plain flour. Heat tawa and place naan over it. Cook it from one side till it puffs. Now cook it from other side and roast it on open flame from both sides. Now, apply good amount of butter on naan and serve it.

Tandoori roti at home (without tandoor):- Ingredients 1 and 1/2 cup maida/plain flour, 1/4 tsp baking powder, salt to taste How to make Take maida, salt and baking powder in bowl and mix them well. Knead soft dough with water. The dough should be soft, not thick. Cover dough with plastic film and keep it in fridge for 60 minutes to make dough really smooth. Take out dough and sprinkle plain dough over it and knead again. Make round balls of dough and roll into circle. Turn on the flame and heat the cooking wire rack and put roti on it. Cook it well from both sides. Put it on low flames to make it crispy. Apply butter on it. Serve it hot.

Paneer Kulcha Ingredients 2 cups maida, 1/2 tsp salt, 3/4 tsp sugar, 1/4 tsp baking soda, 1 tbsp ghee, 1 tbsp yogurt, milk as required for dough For the paneer filling 100 gms paneer (grated), 1 tsp red chilly powder, 1/4 tsp jeera powder, 1/2 tsp garam masala, fresh coriander leaves (chopped), salt to taste How to make Take maida, salt, sugar, baking soda, ghee, yogurt in a bowl. Mix them well. And knead flour with milk. Use wet cloth to cover the dough. Keep this for 60 minutes. Mix paneer, red chilly powder, jeera powder, coriander leaves and salt together. Now make balls of it. Now take the dough and make round balls from it. Take one ball. Roll it into thick small circular roti. Now put the paneer filling in the middle of small roti and close the sides properly. Now again make small round discs with hands. Keep this small disc aside for 10-15 minutes. Flatten this disc into small kulchas. Heat tawa and cook the kulchas from both sides using ghee/butter. Cook kulcha till it get brown. Serve it hot.

Makhani Roti :-Ingredients 1 cup wheat flour, 1 tbsp butter, 1 tsp kalimirch (freshly ground), salt to taste, wheat flour (for rolling), butter for cooking How to make Take wheat flour, butter, salt and kalimirch powder in a bowl and combine them. Knead soft dough using enough water. Make round balls from it. Roll a ball of dough with the help of wheat flour. Heat tawa and cook the roti using butter. Cook it till it gets golden brown from both the sides. Serve it hot.
